The mango is also the national fruit of India, Pakistan and the Phillipines. In Bangladesh, the mango tree is the national tree. Since 1987, an international mango festival is held in New Dehli, India. It includes more than 50 mango growers from across the country. During this festival, there are competitions and quizzes on the many aspects of mangoes, including different uses in cuisine, as well as the many different varieties (more than 550). Mangoes are cultivated in most frost-free tropical climates, with almost half of the world’s mango supply harvested in India. The second largest source is China. Some fun facts about mangoes, include: • 20 million tons of mangoes are grown annually. • They are related to cashews and pistachios. • They provide 100 per cent of your daily vitamin C • A basket of mangoes is a gesture of friendship in India. • Mango trees can grow as tall as 30 metres! • Most of the mangoes sold in the US come from Mexico, Peru, Ecuador, Brazil, Guatemala, and Haiti. • There are also mango festivals in other places, including Canada, Jamaica, the Philippines, and the USA. ????????????? Ingredients– For the base :digestive biscuits, marigold or any plain cookies crushed 150 gms butter melted 1/2 cups For the filling : whipping cream 3/4 cups cream cheese 300 gms mango pulp 1/2 cups fresh lemon juice 2 tbsp Gelatin or Agar Agar 5 tbsp water 120 ml For the topping : mango pulp • some mango slices 3-4 tbsp Method– Crush The Biscuits Using A Food Processor Or By Placing Them Into A Ziplock Bag And Smashing Them With A Rolling Pin. Stir The Crumbs With D Melted Butter N Press On The Bottom Of An 8-Inch(20cm) Springform Tin. Set The Base Aside. In A Bowl, Whip The Heavy Cream Until The Result Is Soft Peaks. Beat In The Cream Cheese. Then Add In The Mango Pulp And Fresh Lemon Juice Until Everything Is Smooth. In A Microwave Safe Bowl, Stir Together The Gelatin And Water. Let The Mixture Stand For About 5 Minutes To Bloom And Thicken, Then Dissolve In The Microwave Over 15 Second Increments Or Over A Stovetop Over Low Heat, Stirring Constantly. Gradually Drip In 6 Tablespoons Of The Cheesecake Batter Stirring Continuously. Work Quickly As The Gelatin Will Begin To Set As Soon As It Has Been Melted. Add The Tempered Gelatin To The Rest Of The Cheesecake Batter Stirring Immediately After It Has Been Added. Pour The Filling Into The Springform Pan And Dollop With The Mango Pulp. Using A Toothpick. Swirl The Pulp Into The Cheesecake- But Beware, Over- Swirling Is Actually Over- Mixing And You'll End Up With A Messy Surface Devoid Of A Swirl Pattern. Chill The Cheesecake For A Minimum Of 6 Hours Or Overnight, Until Set. An unusual biryani that not many might have heard of, Kathal Biryani is made using raw jackfruit pieces cooked slowly with a variety of spices and mixed with basmati rice. Ingredients– For rice : long grain basmati rice 2 cups salt 2 tsp water 4 cups tejpatta 2 tsp green cardamom 2-3 nos 2 inch cinnamon stick cloves 3-4 nos For masala : vegetable oil 3 tbsp ghee 3 tbsp raw jackfruit/ kathal 500 gms Shahi Zeera 1 tsp onions thinly sliced 1 1/2 tsp ginger garlic paste 2 tsp green chillies 3-4 nos yogurt 1 cup red chilli powder 1 tsp garam masala powder 1/2 tsp biryani masala powder 1 tbsp fresh mint chopped 2 tbsp fresh coriander leaves 2 tbsp Some hole garam masala like–black pepper, green n black cardamom, cinnamon stick, cloves n star anise Salt to taste For garnishing : golden fried onions 1/2 cups fresh mint leaves 2 tbsp cashew nuts fried until golden 10-12 nos(optional) 10-15 nos saffron strands soaked in 1tbsp milk Method– For rice :Wash the rice and soak in enough water for 30 minutes. Drain the water n add d rice in heavy bottom pan along with four cups of water, salt, tej patta, green cardamom n cloves. cook the rice until it is 80% done. For masala : Heat oil in a pan. once the oil is hot, add jackfruit and fry until golden brown. Remove from the pan and keep aside. In the same pan, add ghee. once the ghee is hot, add some hole garam masala n Shahi zeera and onion and fry onion until golden brown. Add ginger garlic paste, red chilli powder n garam masala powder n salt and fry for a minute. Add yogurt, green chillies, biryani masala n fried jackfruit n fry for 3-4 minutes. Add mint coriander leaves and cover the jackfruit until it is done. Add little water if required. Assembling the Biryani : In a heavy bottom pan add the jackfruit masala. Sprinkle some golden fried onions, mint n coriander leaves n cashew nuts. Cover with cooked rice. Top with the remaining fried onions, mint n coriander leaves, cashew nuts and saffron soaked in milk. Cover the pan tightly n cook on very low heat for 10_15 minutes. Remove the pan from heat and let it rest for another 10 minutes. Fluffy with a fork n serve hot with raita. INGREDIENTS 250 grams Chicken (Boneless) for the marinade: 1 tbsp Ginger Garlic paste 1 tsp red chilli powder/paprika 1/2 tsp black pepper powder 1 tsp lemon juice Salt to taste for the coating: 3/4 cup Cornflour 1/2 cup cornflour slurry to taste Salt (and Pepper) (Oil for Frying) Method– Cut the boneless chicken into 1 inch bite sized pieces. Mix together all the ingredients under marinade and rub all over the chicken. Marinate for at least half an hour. Season the Cornflour and cornflour slurry with salt and pepper. To start making crispy chicken, arrange an assembly line of sorts. Place Cornflour, Cornflour slurry next to each other along with the chicken. Arrange a plate to place the chicken once coated. Now start by lightly coating the chicken with Cornflour. Dip it in cornflour slurry next, and then again coat with cornflour. Repeat for each piece of chicken, and keep placing them on the plate. Heat oil for frying and deep fry in batches on medium heat till the chicken is cooked through and lightly brown on the outside. Remove from oil. Heat oil on high flame and again fry the half fried chicken till golden brown. Your crispy chicken is ready to serve.
